Instructions
  1. Crack the eggs into a bowl and whisk vigorously. Mix through chives, almond milk and season with salt and pepper.
  2. Melt butter in a non-stick fry pan over medium temperature and saute the shallots for a few minutes. Pour the egg mixture into the pan. Whilst the egg is cooking, use a wooden spoon to gently push the egg mixture creating small lumps throughout.
  3. After a few minutes mix through the ricotta and cook for a further 3 minutes.
  4. Transfer the scrambled eggs into a bowl and serve.
